Wild Rice Salad

WILD RICE SALAD

2 cups of Wild Rice, soaked for 4 days, rinsed twice daily

1 Orange Bell Pepper, diced

1/4 cup of Red onion, diced

2 large stalks of celery, diced

1 lg. cucumber, diced

2 tablespoons of Dill, diced

Prepare sauce in a separate bowl!

1/4 cup white mellow Miso

1/4 cup Raw unprocessed Honey

2 tablespoons of Olive oil

1 tablespoon of flax oil

2 tablespoons of Apple Cider Vinegar

2 tablespoons of Agave Nectar

Whisk sauce together

Add all the diced Veggies into one bowl and then mix in sauce.

ENJOY!!!!

  3. wow, I never thought of soaking rice for days....so I take it the rice becomes chewy rather than solid uncooked/unsoaked rice would be then? Must give this a try, Merci for sharing!!! :0)

    Loulou~ It does become Chewy. But that is the case Chewy. I have had mixed feedback about it from people. Some think it is to chewy[cooked foodies] and I have had people pleasantly surprised. So please let me know what you think.
